Crispy Air-Fried Potatoes
I love potatoes, whether it's French Fries, mashed potatoes, potato chips, or any other form you like. I was looking for a way to make crispy potato wedges to enjoy as a snack or as part of a meal. While conducting research, I discovered that parboiling potatoes before placing them in the air fryer or oven was something I hadn’t done before, as I mainly cook for enjoyment. This recipe is the result of my trials to make tasty treats for myself. Also, as I was satisfied with the results initially, I quicky learned when adding some popcorn shrimp or any other premade food that does not take long to make in the air fryer after the initial cook time of 15 mins, you get the potatoes a little bit extra crispy. It is a bit harder to do in the oven because it needs more time due to space and volume.
Reminder: Every air fryer is different, and you can adjust the recipe to fit your needs. Fewer potatoes will get a better skin. More will land you with having to keep it cooking for longer. A toaster oven is a good option for small batches if you do not have an air fryer and don’t want to use the oven. Also, cooking times with a toaster oven may be shorter, so be mindful of that and I would keep the temp of the toaster to 370F.
Ingredients
2-3 medium potatoes (I typically use Red Potatoes with the skin on, but you can use what you like)
1 Tbsp Olive Oil
1/2 - 1 Tbsp Heath & Herb Italian Seasoning or any other preferred seasoning
3 Tbsp of vinegar
Salt for boiling water
Time: 40 mins to 60 mins
Instructions
Fill your pot 2/3 of water and add salt and vinegar, and bring to a boil.
While water is heating up, cut potatoes to desire size. I typically dice them or cut them into wedges.
Once water comes to a boil, add potatoes to the water for 10 - 13 mins. The more potatoes you add, the longer you should leave them.
Strain the potatoes after the parboil and toss them in olive oil, then season them.
Once the seasoning is evenly mix preheat the air fryer for 5 mins. If you don't have an air fryer, you can use the oven.
Once preheated, add potatoes to the air fryer at 370 F for 11 -15 mins, depending on the amount. Toss potatoes for even sides.
If you want extra crispy, place them for an extra 9 mins at 390 F. If using the oven broil would work great on this step.

Flavor Tip
If you want to try to infuse extra flavor, add some seasoning to the parboil or use a different flavor of vinegar. Don’t let the potatoes sit in the water after boiling is finish due to the vinegar will soak into them. If you want a lighter coat of seasoning, use less than half a tablespoon.
